China White Pai Mu Tan

This rare Fujian white tea is made from the small buds and leaves, they are plucked in early spring just before they start to open. After plucking they are allowed to wither and then dried in the open air. Because of the minimal processing this tea contains more antioxidants than green tea. The brewed tea gives a clear, pale infusion with a smooth velvety flavor.
Use two teaspoons per cup, water temperature 80 degrees celsius, infuse for about 3-5 minutes.
